Wash and clean the shrimp. Cut off the antaenna. You may also peel and devein the shrimp.* Drain the shrimps well.
Heat oil and melt the butter in a pan.
Add the garlic and mushrooms and cook in medium heat.
When the mushrooms are cooked, add the shrimp. Turn the heat to high.
Stir-fry the shrimp and season with salt and pepper. Add the sugar. Cook until the shrimp turns orange. Do not overcook or it will be hard to peel and rubbery.
Add the red chili flakes last if you want it a little spicy.
I usually keep the shell and head intact, especially when I'm cooking with fresh shrimps. That's how we want to eat our Garlic Butter Shrimps. You may buy frozen packs of shrimp that has already been peeled and deveined. It's a matter of personal preference.
